Grouper and New Potatoes with Dill Sauce

Serve with steamed broccoli and a tomato-sweet onion salad.

Ingredients:
1/4 cup Soy Mayonnaise1/2 cup plain soy yogurt2 tablespoons Balsamic Vinegar1 tablespoon Dijon-style mustard1/2 cup chopped fresh dill1 pound new potatoes, halved4 4oz. grouper fillets1/2 teaspoon salt1/4 teaspoon pepper2 tablespoons lime juice

Instructions: |
In a bowl, combine mayonnaise, yogurt, vinegar, mustard, and dill; stir to combine. Cover and refrigerate at least 1 hour for flavors to mellow.
In a large saucepan of boiling water, cook potatoes until tender, 15 minutes.
Preheat broiler.
Sprinkle steaks with salt and pepper, brush with lime juice.
Broil 4-5 inches from heat 3-4 minutes on each side.
Place on individual serving plates with potatoes on the side. Spoon on dill sauce and serve. |
